The marinated salmon is a very simple recipe. We don’t have to cook anything but only mix the ingredients. We’ll use a fresh filet of Scottish salmon and dill and juniper berries as flavors. To realize this recipe we need a cheese cloth and a casserole that can contain our salmon filet.

Before starting we must prepare the ingredients:
- prepare a filet of Scottish salmon (don’t remove the skin)
- mince the dill
- mince grossly the juniper berries
- mix the dill and the berries
- mix the cane sugar with the salt
- one Scottish salmon filet about 600 gr
- cane sugar 300 gr
- salt 300 gr
- 4 sprigs of dill
- 10 juniper berries
Put the cheese cloth over the casserole and lay down the filet on it. Now cover completely the filet of salmon with the minced dill with the berries and cover the dill wit the mixture of cane sugar and salt.
Fold up the cheese cloth and put the casserole in the refrigerator for 3 days.
After 3 days remove the sugar, the salt and the dill with the berries and your marinated salmon is ready to taste.
